
Spicy Yogurt Relish
Originally a part
of Hindu cuisine, this adaptation is a wonderful accompaniment to hot and spicy
dishes of all sorts.
1 teaspoon Nacho
Jalapeños, minced
4 tablespoons wine
vinegar
½ lemon, for juice
only
1 clove garlic,
minced
1 teaspoon Dijon
mustard
¼ teaspoon salt
½ cup unflavored
yogurt
1 large cucumber,
grated
1 small red onion,
thinly sliced
Mix the vinegar,
lemon juice, garlic, mustard, Nacho
Jalapeños and salt. Stir in the yogurt and whisk together to make a sauce. Toss
with the cucumbers and onion. Chill and toss again before serving. Serve on a
bed of rice, or with grilled chicken or beef.
