
Kicked Up Green Chile
Chicken Tortilla Soup
2 cans Medium Green Enchilada Sauce
1 can of Nacho Sliced Jalapeños
2 – 6oz Fresh
Chicken Breasts
1 – 8oz Bag Baked
Tortilla Chips or Strips
2 – Green Onions,
diced – (garnish)
1 Teaspoon of
Cayenne Pepper
1 – 6oz can of
petite diced tomatoes
4 Tablespoons of
Sour Cream or Crème Fresh – (topping)
Sprigs of Fresh
Cilantro Leaves – (garnish)
To Prepare:
In a large sauce
pan, pour both jars of Green Enchilada Sauce into pan and bring to
temperature, do not boil.
Cut chicken breast
into 1” pieces and sauté in a non-stick skillet until golden brown. Once
chicken is brown transfer into sauce pan of enchilada sauce and cayenne pepper,
and diced tomatoes, stir to blend flavors and chicken pieces and reduced heat to
simmer.
In 4 soup bowls
crush tortilla chips into smaller pieces and place in the bottom of the bowl,
spoon soup into bowl over the tortilla chips, garnish with dollop of sour cream,
followed by green onions, fresh cilantro and place a few jalapeños around the
sides and serve.
